The Lieu-Dit "Les Maillons" is located in Barbonne-Fayel, and has vine plants that are about forty years old. From here comes this Extra Brut Champagne Rosé de Saignée Les Maillons, from the Ulysse Collin winery. It is vinified with pinot noir grapes in purity, which are left to ferment from six to eight months in oak barrels, leaving only the indigenous yeasts to act. Then it rests on the lees for 30 to 36 months, without being filtered. Full and complex, both on the nose and on the palate, it is fabulous in its consistency and its balance.
