PRODUCTION AREA: Property of Pianella (PE), locality Granaro, Pusciana, Sant'Angelo, San Nicola.

TYPE OF LAND: Medium calcareous mixture.
AGE OF OLIVE GROVES: 150 years.
OLIVE USES: Dritta di Pianella (100%), collected from October 20th to November 30th. PRODUCTION TECHNIQUE: The olives, hand-picked, are immediately transported to the mill for subsequent milling. The oil obtained is immediately decanted in order to remove any sludge, and put to rest in stainless steel containers under nitrogen. ORGANOLEPTIC CHARACTERISTICS: Green color just obtained, turns yellow after a few months. The nose opens full and enveloping with strong notes of artichoke. The taste is full with slightly fruity tones. It enhances its raw qualities on vegetables and grilled in general. Acidity expressed in 0.17% oleic acid. If stored in a cool and light-free environment, it retains its characteristics for approximately 24 months. PAIRINGS: cod and potatoes soup; linguine with shrimp and scampi in foil; fresh soft cheese; grilled white meat; red meat in tartar.
