GRENACHE 60% SYRAH: 20% CINSAULT: 10% VACCAREZE: 10% The yield of this wine is about 20 hectoliters per hectare. The harvesting and sorting of the grapes are done by hand. The grapes are harvested only after tasting the berries and only when they are ripe. The grapes are harvested in buckets. We use bins up to 1,000 kg for the transport of grapes in the cellar. The grapes are de-stemmed for 90%. The tank is drawn by hand and raised. Thanks to a container with a movable cap that can be removed, all the marc is crumbled over the entire surface and immersed in the bottom of the tank for optimal extraction of the elements of the grapes in the wine (lasts about 35 days).
