The Brunello di Montalcino de Il Marroneto is a DOCG with 100% Sangiovese grapes. The rearing system is spurred cordon while the ground is sea sand mixed with various minerals.
The vinification takes place in steel tanks with continuous recovery for the first 2 days; salt in temperature in 5/6 hours at 33/34 degrees. The fermentation lasts about 11/12 days.
Aging: aged in oak barrels of 25 quintals for 39 months. It becomes Brunello after 5 years, considering even 10 months of aging in bottle.
