WINE DESCRIPTION
Ulysse Collin creates this Champagne Blanc de Blacs formed from Chardonnay grapes only. The soil is thin before reaching the gypsum of the Campano (geological level) and has the particularity of containing silicon in the gypsum. Alcoholic fermentation with indigenous yeasts that lasts from 3 to 6 months. The wine is not filtered. Once bottled, it is aged for 24 months in the cellar.
ORGANOLEPTIC DESCRIPTION
Rich mousse, small bubbles. At sight it shows a lemon-yellow color. The nose is characterized by notes of marzipan, citrus, yeast, mint (freshness). At the Palate it is fresh, concentrated, clean, mineral with a strong acidity but with a delicate body. Medium end finish with an aftertaste of gypsum powder and fresh lemon juice.
