About 65% of Pinot Noir and 35% of Chardonnay. Pinot Noir comes from our "Le Léon" vineyard in Ay, the Chardonnay from Mesnil-sur-Oger and Oger.
Part of the wines is vinified in wood and does not undergo malolactic fermentation to preserve all the freshness of the wine and allow it to acquire greater complexity. Broad and acidulous at the same time, this cuvée lends itself beautifully to a low dosage, "extra-brut", with only 4.25 g / l, or a third of the classic "brut" dosage of Champagne.
A time of aging on yeasts for eight years has magnified this cuvée while allowing it to preserve its original freshness.
