The different planting age of the vines determines different characteristics from each other starting from the density of the vines per hectare which, in the oldest vineyard, is 3000 vines / ha with a planting span of 3 meters while in the younger vineyard we have a density of 5000 vines / ha with a sixth of 2.50 meters. The training system used is the simple spurred cordon in younger plants and double where the distance between the plants is greater. During pruning only one gem is left and from here it derives a notable reduction in the quantity of the fruit, after the green cleaning and the successive phases of flowering and fruit setting of the grape we operate a further pruning called "green harvest" during which it is carried out a first but essential thinning to ensure that each branch left to ripen a single cluster. From these operations an almost maniacal attention to the quality of each bunch derives, which means that there is never an abundant quantity of grapes but one concentrates on a remarkable quality of the same. Further revisions in the vineyard, even during the ripening period, guarantee a control over the quality of each bunch to reach the harvest with scarce quantities but with very high quality. The harvest usually begins in late September - early October. The maturity of the grapes is checked with frequent analyzes.
