Details
After a maceration of about 25 days, in which the alcoholic fermentation takes place at a controlled temperature without the use of selected yeasts, the wine is decanted into French oak barrels where it will carry out the malolactic fermentation naturally and where it will remain for 18 months. In total the aging in wood will be 18-22 months before being bottled without any filtration or clarification. The barriques used are new for 15% and second, third, fourth passage for the remaining 85%.
