Vinification: from the single Ravera vineyard located in the municipality of Novello, with about 4900 plants per hectare of 25 years of medium age. The oldest part was planted in 1935. Ravera di Novello is a fabulous hill with south-west exposure, with calcareous-clay soil. With an area of 3 hectares. The fermentation lasts about 4/5 weeks in a steel tank in contact with the skins. This time includes pre and post fermentation maceration with the use of the ancient submerged cap method. Slow malolactic in large casks, until late spring. The wine therefore remains more than a year on the lees of malolactic fermentation without decanting.
Aging: 32 months in large oak barrels. Bottled without filtration.
