Name: Langhe D.O.C. Nebbiolo
Vinification: vinification of grapes from different Nebbiolo da Barolo vineyards. The alcoholic fermentation lasts about 3-4 weeks at a temperature of 28 ° -32 ° C. The malolactic fermentation in steel and / or barriques follows.
All the vines are vinified and aged separately, until the moment in which the lots are selected that will be used in that year for the Langhe Nebbiolo and those that will continue the refinement for the Barolo Castiglione. Aging: after malolactic fermentation starts in barriques and partly in large oak barrels, it continues the aging in wood for about 2 years, at the end of which it is assembled in steel for bottling.
